Want to learn how to pipe cream on a cake without a course or a drawer full of tools? It comes down to two things: how you hold the bag and how you squeeze. Here are 6 methods from easiest to hardest, plus the differences between frostings and nozzles, so you know what you need before buying anything.
Holding the bag
- Hold it near the top and twist the end so the cream can't escape upwards.
- Squeeze with your top hand. The other hand only guides.
- Keep the pressure steady. Too hard makes a thick line, and uneven pressure breaks it.
- Practise on a plate first. One minute there saves a mistake on the cake.
A rule that helps with everything: pressure sets the thickness, and hand speed sets the smoothness.
6 ways to decorate with cream
- Dots: hold the bag close, squeeze, stop squeezing, then lift. Lift while squeezing and you'll get a tail. This is the easiest method, and it's perfect for edges.
- Lines: touch the surface, squeeze, then lift slightly as you move and let the line fall into place. Don't drag it, or it will break.
- Writing: sketch the word lightly with a toothpick, then trace it slowly. Pick a dark colour that shows up on white.
- Zigzag: move the bag side to side along the edge. It tidies up the whole cake and hides shaky hands.
- Shells: squeeze a large dot, ease off, and pull down. Repeat side by side. A star nozzle makes them prettier, but you can do without one.
- Spiral rose: start from a centre dot and circle outwards two or three times, stopping the pressure before you lift.
Types of frosting
| Type | Good for | Watch out for |
|---|---|---|
| Whipped cream | Covering and simple edges | Soft, and quick to react to heat |
| Buttercream | Roses, borders, writing | Heavier, but holds its shape better |
| Cream cheese | Covering and light layers | Soft, so not for fine shapes |
Whichever you use, decorate somewhere air-conditioned. Heat makes cream melt and much harder to work with.
Do you need nozzles?
Not for your first try. Dots, lines and writing all work without one. If you keep going, these are the common ones:
| Nozzle | Gives you |
|---|---|
| Round | Dots, lines, writing |
| Star | Shells, roses, raised borders |
| Petal | Rose petals and ruffles |
Want to practise without baking?
The hardest part of a first try is often preparing the cake and cream. Our DIY cake arrives covered in white cream, with colours already in piping bags, plus pearls and sprinkles, so you can start right away. Sizes run from a cup for 1–2 people to an 8 inch for 12–16.
Once you've got the methods, try them in how to decorate a cake at home, or see our cake size guide. For the finishing touch, read sprinkles for cake decorating.
FAQ
What's the easiest method?
Dots. Squeeze, stop, lift. After that, lines and zigzags.
Which frosting suits beginners?
For roses and writing, buttercream holds its shape better. For covering and simple edges, whipped cream is enough.
Can I decorate without a nozzle?
Yes. Dots, lines and writing don't need one.
Why does my line keep breaking?
Usually you're dragging the bag across the surface, or moving faster than you're squeezing. Lift a little and slow down.
